Milk mold (Geotrichum candidum), microscopic fungus from the class of imperfect fungi; aerobe; forms on the dense nutrient media white fluffy colonies. Mycelium of M. n. Is divided by transverse partitions into separate cells - segments (oidia). Appears on the surface of fermented milk products (sour milk, acidophilus, etc.), cucumber pickle; forms white deposits on the mucous membrane of the mouth, mainly in children. Dairy mold Geotrichum candidum is located at the junction between yeasts and molds. It reproduces in the same way as yeast - the outer part of its hyphae undergoes, as it were, bandaging - a process resembling the budding of yeast cells. This mold is found on the surface of fermented milk in the form of a thin and velvety white film and participates in the maturation of semi-soft and soft cheeses. It can cause rancidity of the oil. Molds on the surface of cheeses and butter can cause their discoloration and not their own taste. To prevent undesirable effects of molds on dairy products during their preparation, careful compliance with the relevant sanitary standards is necessary.
